Tsuchida specializes in brewing Sake with lots of amino acids. By adjusting their koji-rice making accordingly, they can greatly increase the yield of amino acids in the mash.

It is a clear and beautifully finished Sake. If you want to know about the Tsuchida Sake Brewery, start with this bottle! The balance between the lactic acid, derived from the Kimoto brewing method, and the sweetness from the rice is excellent. Crisp when chilled, mellow at room temperature. The taste goes well with Western foods.
