This Sake is brewed using old methods from the Edo period.
It's recommended to let this Sake breathe and oxidize a little bit after opening the bottle for its full flavor to open up.
常温放置で開栓後1年ほどかけて飲むのも面白いです。
Furthermore, this Sake holds up very well with aging and oxidation. It can be of interest to leave this sake stored at room temperature for up to a year after opening it and discover how the flavor profile develops over time.

Tsuchida specializes in brewing Sake with lots of amino acids. By adjusting their koji-rice making accordingly, they can greatly increase the yield of amino acids in the mash.
