Izumibashi - "Pink Natsu Yago" Junmai
Izumibashi is know for their Dragonfly label, but on their limited summer edition Sake bottles, they instead picture a cute dragonfly nymph (since the summer is the time in the dragonfly's life cycle where the larvae hatch and become water dwelling nymphs, called "Yago" in Japanese).
This is a Kimoto Junmai undiluted sake, made with with their own grown Omachi rice.
It has a strong lactic acid aroma unique to Kimoto, and with a rich flavor and sourness typical of Omachi rice.
Despite having a high alcohol content of 18%, you wouldn't guess it from the taste, because it is surprisingly easy to drink.
ストーリー
The name "Izumibashi"
There is a river called "Izumigawa" on the north side of the brewery that was supplied the irrigation canals for the brewery's rice fields. The name "Izumibashi" literally means "Izumi Bridge".
Izumibashi's own cultivated rice
The Izumibashi brewery have their own rice fields, where they grow a lot of the rice they use themselves. Also, they do not use any pesticides in their fields, and this makes them abundant with dragonflies. Hence their label design.
